Peel a squash, grate it and cut it into cubes. The same is done with celery. In a saucepan, heat the carrots and celery. At the end, add the finely chopped onion. When the meat no longer froths, pour the mixture of hardened vegetables into the pot with water and let it boil over the right heat. When they are almost cooked, add the thinly sliced mushrooms and then the peeled zucchini and seeds and cut into cubes.
Let it boil for about 15 minutes, eventually check if they are all cooked, add salt to taste, and finally add a teaspoon of hot pepper paste. Let it boil for another 2-3 minutes and turn off the heat. Put a stalk of celery leaves in the pot and cover with a lid. Leave for a few minutes and then serve, whoever wants with a little freshly ground pepper on top.
