The cauliflower soup is a light and refined first course that conquers even the most demanding palates. It can be accompanied with croutons or enriched with Parmesan cheese, I propose it to you as light as possible because one of the good intentions of this 2017 is to make my husband follow a healthy diet so as to make him throw down some bacon !
The ingredients to use for this soup are very simple: potatoes, extra virgin olive oil, spring onion and vegetable broth, obviously without forgetting the cauliflower in question.A nice plate of cream of cabbage hot and dinner is served!
How to make the cauliflower soup
Wash and peel the potatoes, then cut them into chunks.
Do the same with the cauliflower that you will divide into florets.
In a saucepan, fry the chopped spring onion.
Once golden, add the potatoes and cauliflower.
Cook for a couple of minutes then cover with the boiling broth. Cook for 30 minutes, stirring occasionally.
Once both the cauliflower and the potato are cooked, season with salt, then blend with an immersion mixer.
Bring your cauliflower cream to the table with a sprinkling of chives placed directly on the plates.
