Risotto of lovers recipe of 11-02-2016 [Updated on 30-09-2018]
The risotto of lovers is my proposal for this Valentine's Day. They say that shellfish and chilli are aphrodisiacs, so here is the recipe for you to prepare a delicious risotto with crabmeat and paprika, with some cherry tomatoes to remember the color of love and whipped with mascarpone that gives it the right creaminess. To crown it all is the choice of shape: to serve it, in fact, I chose a heart-shaped pastry cutter, perfect to make the most romantic day of the year even more special. Even today I am struggling with video recipes, so I leave you running the recipe to prepare the perfect lovers' risotto and the link to the special Valentine's Day and get back to work!
How to make the lovers' risotto
Clean the leek, slice it thinly and sauté it in a saucepan with a knob of butter.
Wash and cut the cherry tomatoes and prepare the crab meat.
Lightly fry the garlic with a drizzle of oil, then add the crab and cherry tomatoes, add salt and cook for about ten minutes.
Add the rice to the casserole with the leek and toast it for a few minutes, then blend with the sparkling wine.
Then cover with the hot broth, add salt and cook (it will take about 15 minutes).
Towards the end of cooking, add the crab meat to the risotto.
Add mascarpone and paprika to taste and season with salt.
Serve using a heart-shaped pastry cutter.
Decorate with a whole chilli pepper and immediately serve your lovers' risotto.
