The best time to do it is between March and June, when these sweet fruits ripen and are sugary at the right point. Speaking of sweetness, the medlar obviously they don't all taste the same and sometimes the sugar dose could be a bit low. How to make medlar jam
Peel the medlars and remove the stone by placing them in a bowl.
Add the sugar, cinnamon, vanilla essence and lemon juice.
Mix everything and leave to flavor for a few hours.
Now transfer them to a saucepan and, stirring occasionally, cook them over low heat for about 30 minutes.
At this point, blend them with an immersion blender.
Let it thicken a little longer and turn off the heat.
Now pour the jam into the sterilized jars.
Screw on the lids and turn over until completely cool.
Your medlar jam is ready to be stored in the pantry.
