Blueberry and chocolate cake

On the occasion of my husband's name day, I prepared this delicious blueberry cake with lots of chocolate. I served it with friends and it was much appreciated.

I recently discovered this wet countertop and it is the best wet countertop I have prepared so far. Be sure to try it yourself and convince yourself how delicious it is.

-for wet countertop (23 cm):
133g dark chocolate (54.5% cocoa)
80g hot coffee
166g Greek yogurt
133g oil
3 eggs
200g flour
200g sugar
66g extra black cocoa
5g baking powder
2g salt

-for chocolate cream:
400 g chocolate with min. 50% cocoa
600 ml natural cream for cream with min. 30% fat
250 g mascarpone

- for decoration:
chopped hazelnuts

Method of preparation:
For the countertop:
Put the chocolate in 80g of hot coffee and let it melt, stirring gently. If it does not melt perfectly, you can put the mixture on the steam bath. Allow to cool.

Put the eggs, oil and yolk in a bowl and mix with a whisk, then add the chocolate cream and mix. Ideally, all ingredients should be at room temperature.
In another bowl put the flour, cocoa, ground sugar, salt and baking powder and mix well, then sift it over the liquid composition and mix gently with movements from bottom to top. Do not mix until the mixture is homogeneous.
Line the bottom of a tray with baking paper and grease the edges with butter, then pour the composition. Put the tray in the preheated oven at 160 degrees C, for 50-55 minutes, until it passes the toothpick test. Turn the dough upside down on a grill and let it cool completely. After it has cooled completely, cut it into 3 horizontally.

Heat 400ml whipped cream, put it aside and put the broken chocolate in small pieces (400g) in it. Leave it still for 1-2 minutes, then homogenize the ganache. Leave to cool and then refrigerate for 4-6 hours.

Put the blueberries with the sugar in a bowl and let them boil for 5-7 minutes. Add starch to the juice left by the blueberries and mix the composition and then let it simmer, stirring constantly until the composition thickens. Let cool.

Place a countertop on a plate inside an adjustable cake ring and spread half of the blueberry jelly.

Put 1/3 of the chocolate cream (using a posh) and smooth the cream with a spatula.

Before undoing the adjustable cake ring, carefully pass it around with a knife to peel off the edges.

If the cream kept cold has hardened, pour 100 ml of whipped cream over the cream and mix until the composition is homogeneous.

Spread a layer of cream over the last countertop and decorate the cake according to your imagination, with the remaining cream.
You can sprinkle with chopped hazelnuts or fruit.

The frameless cake is as tasty as the classic one, and the secret lies in the mayo. If the yeast and flour are of good quality and the mayonnaise grows, then the cake will also grow, without the need for whole hours of frying.

The frameless cake is the perfect solution for those who are not so good in the kitchen or do not have the time and patience to waste an hour framing the cake. All you have to do is mix the ingredients (which must be at room temperature or lukewarm) and mix well, then let the dough rise, without even needing to get your hands dirty.

  • 500 g flour
  • 250 ml of warm milk
  • 100 g sugar
  • 100 g butter
  • an envelope of dry yeast
  • 3 yolks
  • peel half a lemon
  • a pinch of salt
  • For the filling:
  • 250 g ground walnuts
  • 100 g of shit
  • 2 tablespoons cocoa
  • 3 egg whites
  • 80 g sugar

Sift the flour into a large bowl. Mix lukewarm milk with yeast and a tablespoon of sugar and let rise for 5 minutes. When the mayonnaise has risen, mix it with the yolks, melted butter and lemon peel. Add the rest of the sugar and a pinch of salt and mix well until smooth.

The first time we make the dough: Dissolve the yeast in a teaspoon of sugar and when it has become a paste we pour it into the bowl in which we put the flour, leave it for 10 minutes until it swells a little. Meanwhile, heat the milk with the sugar and vanilla, so that it is warm and the sugar is melted. Beat the egg a little with the salt powder and add it to the flour bowl, add the sweet milk and start kneading a homogeneous and sticky dough, we help ourselves with butter, which we melt, so that it is warm. After we have incorporated it well, we obtain an elastic and easy to spread dough. Let it rise until it doubles in volume.

For the filling: Peel the apples, then grate them with large mesh and boil them together with the sugar and cinnamon until all the apple juice is reduced. Let cool, stirring occasionally.

After the dough has risen, we spread it in a rectangular shape and place the filling over it, cut 3 vertical strips, then we put these strips on top of each other and again we cut 6 more times, until we get 6 square weights.

Start the robot and knead for about 10 minutes until you get a dense and sticky dough. The robot stops.
Cover the dish with a clean towel and leave to rise for about 2 hours.
After 2 hours, remove the dough on a wooden board, floured or on a work surface.
Divide the dough into 2 equal balls, then spread each half into a rectangle. Spread half of the amount of walnuts, then roll each dough. Both rolls are woven in the form of a cake, placed in a baking dish provided with baking paper. Grease with egg yolk.

Leave it for another 5 & # 8211 10 minutes, then put it in the preheated oven, at 180 degrees C, for about 35-40 minutes.
I baked on the program with ventilation, baking up and down.
