A warm and decadent appetizer that is not difficult to prepare. If you don't like apricot jam, you can experiment with other jams, nuts, and toppings — like brown sugar, toasted pistachios, and dried cherries. Serve with slices of toasted baguette.

Ingredients

  • One 17.3-ounce box puff pastry sheets, thawed
  • Flour, for rolling
  • One 6-inch round of Brie
  • A jar of good preserves; I used apricot
  • Toasted almonds (optional)
  • 1 egg, lightly beaten
  • 1 baguette, sliced into ½-inch thick slices and toasted, for serving

Directions

Preheat oven to 400 degrees.

Unfold the puff pastry onto a lightly floured surface. Roll it out to about a ¼-1/8-inch thickness. Place the Brie on the puff pastry, about 2 inches from one side. Top with the jam and optional almonds. Flip the jam-topped Brie upside down and trim the puff pastry to create a square with sides 2 inches from the cheese.

Fold the puff pastry around the cheese, overlapping each segment and pressing the edges to seal, until the cheese is fully wrapped. Set on a baking sheet.

With the excess puff pastry, press cookie cutters into leftover pastry to make shapes (I like a little nature with my pastry, so I chose leaves. Monograms are my other favorite). Now brush the cheese with a lightly beaten egg all over the brie. Arrange your cutouts onto the top of the round (artfully now) and brush again with egg.

Bake for 20 minutes at 400 degrees and serve warm on a pretty platter with toasted baguette slices.

Brie en Croute Recipe

During the holidays, when we are asked to bring a dish, our go to appetizer recipe is Baked Brie en Croute with Cranberry Chutney. It is a recipe that sounds impressive but is super easy to make! It only requires 4 ingredients and 15 minutes of prep time! We usually make the chutney from scratch. But, you can buy any jarred chutney.

1 wheel of Brie (the recipe I’m showing here, used a small wheel)

1 package of phyllo dough (you will only need half the box for a small wheel)

Now you need to prep your area. You need one clean, damp dish towel to keep over unused phyllo dough. Phyllo dough dries out quickly, so you want to always leave it covered when not working with it.

Melt the butter and get out a sharp, un-serrated knife.

Brush a sheet tray with butter and set the oven on 350 degrees F.

You will be working with two layers of phyllo dough at a time. You will use 10 sheets of phyllo dough. Lay the first two on top of each other horizontally on a clean surface. Brush them generously with melted butter. Then place two more pieces on top of them, but this time, vertically. Brush them generously with butter.

Take two more pieces and lay them on top diagonally. Brush them with butter. Then take two more pieces and lay them on top the other way, diagonally. Brush them with butter. Every surface of the phyllo should be brushed with butter. (Note…In my photos the dough is cracked on the edges because I left it out to defrost too long and the edges dried out. I recommend letting the phyllo defrost in the fridge overnight, instead of on the counter.)

Place the brie in the center.

Take one side of the phyllo dough and wrap it over the chutney. Brush corner with butter. Then go around the brie, gently folding dough over until the chutney is covered.

With the other two pieces of phyllo dough, brush them with butter. Then cut 3, 2 in. strips. Gently wrap a strip, folding and twisting to make a rosette. Do this with the other two strips and place on top of the brie.

Place the brie on the prepared pan.

Bake for approximately 15-20 minutes until the phyllo turns golden brown. Serve on a platter with crackers or crostini.

Baking Brie En Croute

Brie En Croute is simpler than it sounds. Start by preheating your oven to 400º Fahrenheit. While your oven warms, thaw out one sheet of puff pastry. Place a Président® Brie round in the center of the puff pastry and fold the corners of the puff pastry until it completely wraps your Brie round.

Whip one egg in a small bowl and brush the outside of the puff pastry with a light, even layer. Then, bake the encased Brie in the oven for 35-40 minutes until it becomes golden. Let it cool for about 5-10 minutes before enjoying. Pro Tip: You can follow this exact same method but substitute Président® Wee Brie for a delicious bite-sized version!

Heat the oven to 400°F.  Beat the egg and water in a small bowl with a fork or whisk.

Unfold the pastry sheet on a lightly floured surface.  Roll the pastry sheet into a 14-inch square. Cut off the corners to make a circle.  Sprinkle the almonds and parsley in the center of the circle.  Top with the cheese.  Brush the edge of the circle with the egg mixture. Fold the pastry up over the cheese to cover.  Trim the excess pastry and press to seal.  Brush the seam with the egg mixture.  Place seam-side down onto the baking sheet. Decorate the top with pastry scraps, if desired.  Brush with the egg mixture.

Bake for 20 minutes or until the pastry is golden brown.  Let stand for 45 minutes.  Serve with the crackers.

How to Thaw? Thaw time may vary.  Pastry should unfold easily but still be cold after thawing.  At room temperature, thaw unwrapped pastry for no more than 40 minutes.  In the microwave, wrap pastry in paper towel and microwave on HIGH for 15 seconds, then turn it over and microwave for another 15 seconds.  If it doesn’t unfold easily, microwave for another 5 seconds on each side.


Baked Brie en Croûte

I stole this recipe for Baked Brie en Croûte from the-girl-who-ate-everything.com who stole it from Paula Deen. This fancy looking appetizer is actually very easy to make. First frozen puff pastry is defrosted. Then butter is melted in a saucepan and chopped pecans are sautéed until golden brown before adding cinnamon to the nuts. Brie is placed in the center of the puff pastry and topped with the pecan mixture. Brown sugar is sprinkled on top before closing the puff pastry around the brie. Then this appetizer is baked until golden and served with crackers. Enjoying this appetizer is one thing to not regret about 2020.

The ingredients for this recipe are: 1 sheet frozen puff pastry, 1 tbsp butter, ½ cup coarsely chopped pecans, ⅛ tsp ground cinnamon, 8 to 14 oz wheel Brie, ¼ cup brown sugar, 1 egg beaten and crackers or sliced apples for serving

Preheat oven to 375 F. Defrost puff pastry for approximately 15 to 20 minutes by laying it out at room temperature. Once it has defrosted, unfold it. Then in a saucepan, melt the butter over medium heat. Sauté the pecans in the butter until golden brown, approximately 5 minutes.

Next add the cinnamon and stir until pecans are coated well. Lay the puff pastry flat on a parchment lined baking sheet. Place the brie in the center of the pastry. Then place the pecan mixture on top of the brie and sprinkle the brown sugar over the mixture.

Gather up the sides of pastry, pressing it around the brie and gather at the top. Fold and pinch the edges together so it doesn’t come open.

Then brush the beaten egg over the top and side of pastry.

Bake for 20 minutes or until pastry is golden brown.

Serve with crackers and/or sliced apples.

Slice open and enjoy the goodness!

Here&rsquos what you&rsquoll need: refrigerated pie crust (or puff pastry dough), a wheel of brie, and egg, a smidgen of water and to top things off&hellipsome homemade cranberry sauce. The cranberry sauce is completely optional but it adds so much holiday color and works so well with the brie.

You&rsquoll also want some crostini for serving, which can be store bought or homemade.

Prepare the basic cranberry sauce the day before and refrigerate. Although you&rsquoll only need a small amount of the cranberry sauce, the leftovers may be frozen until needed for your holiday dinner.

Okay, let&rsquos prepare this appetizer!

Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.

Step 1: Allow the refrigerated pie dough to warm to room temperature, then roll it out on the lined baking sheet. Place the wheel of brie cheese in the center of the pie dough and fold up all of the edges, slightly pinching them together to ensure it stays in place.

Step 2: Make an egg wash with 1 egg whisked together with a teaspoon of water (or milk) until combined. Use a pastry brush to glaze the pie dough with the egg wash.

Bake 20 to 25 minutes until golden brown.

Transfer to a serving dish and top with the cranberry sauce. Garnish with fresh rosemary and cranberries if desired for a festive holiday look and serve alongside crostini.

Preheat oven to 350°F (177°C). Using a sharp knife, score top rind of cheese in a criss-cross pattern, spacing cuts about 1-inch apart.

Roll puff pastry out onto a large cutting board or work surface. Set cheese in center of square, top with fig spread, and sprinkle thyme leaves on top. Fold dough up and over sides of cheese, pleating it on top to enclose cheese. Gently pinch dough together in center to seal gathered pleats. You can tie a bit of kitchen twine on top to hold pleats together if you like, but this is not required.

If dough is no longer cold, chill wrapped cheese for at least 20 minutes. Prepared cheese wheel can be wrapped tightly with plastic wrap and refrigerated until ready to bake.

Line a baking sheet with parchment paper. Place wrapped cheese wheel on prepared baking sheet and brush evenly with egg wash. Bake until pastry is crisp and golden brown all over, 25 to 35 minutes. Let rest 5 minutes, then garnish with rosemary sprigs and sliced figs if desired and serve.
