Squid, Lemon, and Zucchini Blossom Fritto Misto

During summer months, find zucchini blossoms at specialty grocers or at farmers’ markets. Halved scallions can be used instead, and small shrimp can stand in for the squid.

Ingredients

Olive Oil Aioli

  • 1 garlic clove, finely grated
  • 2 tablespoons fresh lemon juice

Fritto Misto

  • 2 large egg whites, room temperature
  • 2½ cups all-purpose flour
  • Vegetable oil (for frying; 6–8 cups)
  • 1 pound baby squid, cleaned, bodies and tentacles separated, patted dry
  • 1 lemon, sliced into very thin rounds, seeds removed, patted dry
  • 8 zucchini blossoms, stamen removed (stems left intact)
  • Olive Oil Aioli and lemon wedges (for serving)

Recipe Preparation

Olive Oil Aioli

  • Pulse yolk, garlic, and lemon juice in a food processor to combine. With the motor running, drizzle in oil, drop by drop at first, then increasing to a slow, steady stream; process until aioli is thick and light. Season with salt.

  • Do Ahead: Aioli can be made 1 day ahead. Cover and chill.

Fritto Misto

  • Whisk egg whites and a pinch of salt in a medium bowl until soft peaks form.

  • Whisk flour in a large bowl to remove lumps. Create a well in the center and gradually add club soda, whisking from the center outward to incorporate and blend, until batter is the consistency of heavy cream (you may have some club soda left over). Fold egg whites into batter; cover and chill 30 minutes.

  • Fit a large heavy pot with thermometer; pour in oil to 4" up sides and heat over medium-high until thermometer registers 350°. Working in 3 batches and returning oil to 350° after each, dip squid into batter, letting excess drip back into bowl. Fry, turning occasionally to brown evenly and separating pieces as needed, until golden and crisp, about 2 minutes (squid may spatter in oil, so be careful). Using a spider or slotted spoon, transfer to a paper towel–lined wire rack; season with salt.

  • Working in 2 batches for each, repeat process with lemon rounds, then zucchini blossoms. Serve fritto misto with aioli and lemon wedges.

Best Prawn Curry from Goa

I’m always in search of a better prawn curry than the one I made last time, but the search is over, for a while at least. I’ve made many a good prawn curry along the way, Prawn Jingha Masala, various Keralan prawn curries with coconut milk and fresh curry leaves, prawn Malabar and north Indian masalas, and have finally settled on Prawn Balchao, a prawn curry from Goa. The combination of spice and vinegar makes this gravy really appealing on a cold night. The recipe is relatively simple. Once you’ve made the paste, the rest follows within minutes. During lockdown times, I’ve used frozen prawn cutlets ( large Australian prawns that have been pre-shelled and frozen on board fishing trawlers) and now keep a supply stashed in the freezer especially for this curry.

Prawn Balchao for 2-4 or more with other dishes.

  • 8g ginger, peeled
  • 15 g garlic, peeled
  • 5 dried mild red chillies
  • 2 cloves
  • 6 peppercorns
  • 1 teaspoon cumin seeds
  • 1/2 tablespoon brown mustard seeds
  • 1/2 teaspoon turmeric
  • 2 1/2 tablespoon vegetable oil
  • 1 small onion, peeled, finely chopped
  • 3 tomatoes, finely chopped ( or use canned tomatoes with only a tiny part of the juice- about 3/4 cup)
  • 1 green chilli, left whole
  • 3-4 tablespoons malt or red wine vinegar
  • 1 tsp sugar
  • salt to taste
  • 300 g raw prawn meat ( this is the shelled weight)

Make a paste of the ginger, red chillies, and all the spices. I find a large mortar and pestle is the best tool for this job. You can produce a fine paste with a couple of minutes of banging and grinding. A food processor is too large for a paste this small. Add a little water to the paste towards the end to achieve a fine texture.

Heat the oil in a large non stick wok and fry the onion gently until golden. Add the tomatoes and green chilli and fry for about 10-12 minutes over a moderate heat until the mixture becomes a deep red colour. Add a splash of water if the pan becomes dry.

Add the spice paste and fry for 5 minutes until the oil separates. Add the vinegar, sugar and salt. Cook another minute and taste for a balance of flavours. adjust the salt if needed. Add the prawns and cook for 2 minutes or until cooked through. At this point, if the curry is too dry, you can loosen it with water, or cream. The latter additions are not so authentic, but I like a wet gravy in this curry and so recommend loosening the mixture.

Serve with rice and other lovely sides, with some papadum or naan.

5 Ways Street Food Quests Serve as a Tool for Exploration

1. They take your further

Use the street food dish you seek as the final destination. Many of the world’s most fascinating markets and remarkable street food stalls are found in areas well away from tourist centers and popular neighborhoods. The process of seeking out street food often creates a “mission” that takes you across town to and through neighborhoods you might otherwise not visit.

Whether you walk or use public transport, your quest for the ultimate dumpling, bean soup, taco or curry becomes an adventure in itself, with the meal as the goal, but the journey as the unexpected payoff.

2. They take you deeper

Street food is remarkably democratic, for we all need to eat. One of the best ways to meet and engage with ordinary, local people and land the holy grail of authentic local interaction (i.e., outside of tourism and service professionals) is by sharing a plastic table, communal condiments, and a bit of conversation.

If spoken language isn’t an issue we’ll often begin by asking questions about local food, which can lead to topics such as family, culture, and politics. If there is no common spoken language, we’ll practice our charade skills to inquire as to which condiments to use or how to properly tackle what we’re eating.

In any event, we find that almost everyone enjoys sharing their local cuisine with visitors.

I may not be as intrepid or adventurous a street food eater as Dan, but the search for street food definitely helps build my culinary courage. If I can't easily identify the food in front of me (e.g., it has come from a part of an animal I’m not accustomed to eating), I often shy away.

But when I find myself in a street food setting where people are excited for visitors to try their food, it’s difficult for me to say no. I often find that my fears about the food were unfounded, and I enjoy it much to my surprise.

4. They help you exercise your language skills

If you are looking to exercise your linguistic chops, there’s no better place than over a shared meal with random strangers. And if you're accompanying your meal with a cold beer, language inhibitions seem to fall away even quicker.

5. They teach you how simple it is to cook

Since you are so close to the action, street food lays it all bare. Street food chefs offer the opportunity — language skills permitting — for you to get a firsthand sense of the flow and preparation of your favorite local dishes as you admire the culinary magic up close.

After you witness a beautiful dish emerge from a tiny gas stove and a kitchen equipped with only basic tools, you begin to understand the great lessons in limitation.


Batter Up: It’s the Only Way to Fry

Frying is one of the most violent means of cooking possible, and anyone who would deep-fry something without providing it at least a thin blanket of protective batter is nothing short of a barbarian.

Without a batter, food fries to a frazzle: crisp, yes, but shrunken and shriveled as well. Only the tough survive, so it should be no surprise that the foods that last are usually tough, or at least stringy.

But with a batter, you get the best of both worlds. The coating fries crisp and golden the inside steams, moist, delicate and tender.

But which batter to use? The cook faces a bewildering array of possibilities: a simple dusting of starch a coating of starch and liquid a batter of starch, liquid and protein. They all have their benefits, depending on what you want the final dish to taste like.

Michael Blumenthal--food scientist and home cook--says it all depends on how crisp you want your food to be.

Starch by itself--usually either flour, cornstarch or bread crumbs--will give you a fairly soft crunch and not much coating. Think of a veal scaloppine, dusted in flour and fried.

Add a liquid and the starch will coat better (flour and water make paste, which sticks to the food being fried) and be crisper. That’s because the water in the batter will evaporate, leaving behind the structure of the dried-out starch. Two of the world’s most versatile batters need be nothing more than flour and water--the Italian pastella and the Japanese tempura. When using this kind of batter, always make sure the liquid is ice-cold. That makes it stick to the food better.

For the crispest crust, add a protein, such as egg or milk. A protein glue has much more flavor than a starch glue. The protein itself acts as a crisping agent. The protein can either be part of the batter or it can be applied before--as an egg wash, for example--to make the batter stick better. Think of a crisp brown wiener schnitzel.

If you’re using an egg in your batter, don’t prepare the food until just before you’re ready to fry. First, raw eggs can be contaminated with salmonella and the batter is a perfect medium for the bacteria’s growth. A delay can also give the starch more time to absorb liquid from the batter, making it less crisp in the end.

Another popular source of protein for batters is beer. Not only do you get a good, sticky glue and the flavor of the beer, but the sugars caramelize and the sugars and amino acids in beer combine to give a very nice browned flavor when heated (our old friend the Maillard reaction). Tastes will vary depending on the type of beer used.

Whatever the nature of the batter, you’re better off leaving out seasonings--especially salt. They tend to fall out of suspension and degrade the oil faster. Instead, season the food you’re going to fry before you dip it in the batter and then season the food after it’s been fried. (Simply seasoning food after frying gives you a salty crust and a bland center.)

The type of oil you use to fry will affect the crispness of the crust too. The more saturated the fat, the crisper the crust. There are a couple of reasons for this.

First, the more unsaturated the fat, the more liquid it is at room temperature. Since quite a bit of oil can be absorbed in frying, a more liquid fat will make the food less crisp.

Also, the more unsaturated a fat, the more it tends to creep through the batter into the space between crust and food. This can create a major surprise when you bite in and break the crust--a boiling fat chin bath. Fats that are more saturated crystallize inside the crust layer and form an impermeable barrier between fat and food.

That’s good, ‘cause baby, it’s hot outside.

Fried zucchini flowers are one of the classic uses of pastella, the Italian version of a flour-and-water batter. The mixture should be thin enough that it barely coats the flower you should be able to see the orange of the petal through the crust. The flowers can also be fried without a filling. This version came about on a day when I was planning on serving a mozzarella salad for another appetizer and accidentally added too much garlic. Too strong by itself, when encased in a fried flower, the flavors were just right.

1 (8-ounce) package small fresh mozzarella balls (boconccini, ciliegini or ovalini)

1/4 teaspoon red chile flakes

24 zucchini flowers (about 1 pound), preferably without zucchini attached

Preheat the oven to 375 degrees F. Line a large sheet pan with aluminum foil.

Toss the potatoes with 2 tablespoons of the olive oil spread them evenly on the sheet pan, and bake, turning occasionally with a spatula, until golden brown on the outside and creamy inside, about 20 minutes.

While the potatoes are roasting, finely chop the rosemary and garlic together. Remove the pan from the oven and place it on top of the stove.

Drizzle the remaining two tablespoons of olive oil over the potatoes, sprinkle with sea salt and 2 tablespoons of the rosemary-garlic mixture. Mix well.

Return the pan to the oven to heat the seasonings through.

Serve as a side dish.
